Oboro Nori Tsukudani
Nori Tsukudani is a sweet and savoury light paste-like preserve made by simmering nori-seaweed in a blend of soy sauce, sugar, and mirin until it becomes thick and spreadable. Our Nori Tsukudani is made using premium nori from Hyogo Prefecture, combined with Oboro kombu; made from first-grade, wild Shirokuchi-hama Makombu from Osatsube, in the southern Japanese region of Hokkaido. This grade was once presented to the Shogunate as an Imperial tribute. (Now, with no further harvests, it is an extremely rare delicacy). Slowly simmered with plenty of kombu dashi, the result is a slightly sweet delicacy with a refreshing finish. Dual layers of umami from the kombu dashi and Oboro create a rich, savoury flavour. This is one of our exclusive products, known for its pure and additive-free umami.
