Ne Kombu Tsukudani

Ne (Root) Kombu Tsukudani is made from the single root kombu found on each kombu, slowly simmered in a rich, savoury blend of soy sauce and mirin. Traditionally, root kombu is very tough and not suitable for tsukudani, but by using cultivated root kombu from the cold, nutrient-rich seas of Hokkaido and cooking it gently over time until we’ve achieved a soft and tender texture. Free from additives, it offers a pure, refreshing sweetness.
